What’s For Dinner?

Easy Peasy Extra Meaty Lasagna 

This recipe is my hubby’s favorite & since he’s been out of town for work I’m making it for when he gets home tonight. I like this recipe because it’s pretty easy to put together when the girls are napping and then I can just leave it in the fridge until it’s time to heat up just before for dinner. My hubby likes his lasagna extra meaty so I use two packages of Italian ground turkey meat but you can use one if you like less. 

Ingredients:

  • 2 lb Italian turkey sausage or ground beef
  • 1 tbsp minced garlic
  • 1 tbsp italian seasoning
  • 2 (14 oz) cans of crushed tomatoes
  • 6oz can of tomato paste
  • 8oz package of lasagna noodles
  • 16 oz container of cottage cheese
  • 2 eggs
  • 1 (4oz) container of shredded Parmesan cheese
  • 1 bag of shredded mozzarella cheese

Brown the meat and then add the next 4 ingredients on the above list. Simmer uncovered for about 30 minutes while stirring occasionally. Cook noodles according to package instructions. In a separate bowl combine cottage cheese, eggs and Parmesan cheese. To assemble the lasagna place 1/2 the noodles in the bottom of a 9×13 size casserole dish, then add 1/2 of the cottage cheese mixture on top and 1/2 the mozzarella cheese on top of that. Then add the beef mixture and repeat the layers. I either put in the fridge until it’s time to cook or bake at 350 degrees for 30 minutes or until heated through. 

Optional toppings: Additional tomato sauce, crushed red pepper, and parsley flakes.
